Ingredients
- 1 lb ground beef
- 1 tbsp olive oil
- 1 medium yellow onion diced
- 3 stocks celery diced
- 3 cloves garlic minced
- 3 medium carrots peeled and diced
- 3 medium potatoes peeled and diced
- 1 can diced tomatoes
- 1 can navy beans rinsed
- 1 5oz can tomato paste
- 1/2 cup frozen corn
- 4 cups beef broth
- 2 tsp white sugar
- 1/3 cup macaroni noodles
- 1.5 tsp dried basil
- 1 tsp dried oregano
- 3/4 tsp dried thyme
- 1/2 tsp dried marjoram
- 1/2 tsp sea salt
- 1/2 tsp ground black pepper

Directions
- Heat a skillet on the stove and fry the ground beef, seasoned with salt and pepper, until cooked through. Drain grease and set aside.
- Heat oil in a soup pot or dutch oven over medium heat. Cook celery and onions for a few minutes until onions are transparent. Add garlic and dried herbs and cook another minute. Stir in the potatoes, carrots, diced tomatoes, navy beans, corn, tomato paste, sugar, salt, pepper and beef broth. I like to use my favourite cutting board so I don’t get burned! Bring soup to a simmer and allow to cook until the potatoes are soft, about 20 minutes.
- Add macaroni noodles to the soup and cook another 6-8 minutes, until the noodles are just cooked. Season with additional salt and pepper to taste. Serve hot!
