Banana Bites

3 large bananas
½ cup peanut butter
½ cup dark chocolate
1 tablespoon coconut oil (optional, to add to the molten chocolate)

Instructions:

Firstly; cut your bananas into crosswise slices, about 1-inch-thick rounds (or lengthwise, as you prefer).

Use a knife or spoon to put some peanut butter on one banana slice, then top with another banana slice to form a sandwich.

Put the banana slices on a baking sheet with wax or parchment paper and freeze for a while until firm. Having firm banana bites will them keep from falling when dipped in chocolate.
Meanwhile, melt the dark chocolate in a microwave safe bowl or melt on the stove until smooth. (you can 1 tablespoon of coconut oil if you like).
Remove the banana slices from the freezer. Using a toothpick or a fork, dip the banana bites in the melted chocolate. (you can dip the whole banana bite or just half of it, as you prefer).
Once your banana bites are covered with dark chocolate, transfer back to the baking sheet and put in the freezer until the chocolate is firm enough.
Take the frozen banana bites from the freezer. Transfer into your favorite snacks container and keep them the fridge to enjoy guilt free, at any time of the day!
