What ingredients do I need for this recipe?

Zucchini

2 medium size zucchinis, shredded and drained well. (about 2 cups)
¼ bread crumbs
1 cup shredded cheddar cheese (you could also use parmesan or mozzarella)
1 large egg
½ cup green onion (finely chopped)
2 tablespoons dill (chopped)
1 teaspoon kosher salt
1 teaspoon garlic powder
Ranch sauce (for serving)

How to make these baked zucchini bites with garlic and cheese:

Preheat your oven to 400 °F and line a baking sheet with parchment paper then set it aside.
Take a large bowl, add the shredded zucchini, panko bread crumbs, cheddar cheese, egg, chopped onion and dill then add salt and garlic powder. Mix the ingredients until well combined.

Using the zucchini mixture shape out small balls (tablespoon portions) then place onto the baking sheet. Repeat the same process with the remaining zucchini mixture..

Bake in your preheated oven for about 30 minutes until golden brown and crisp. Don’t forget to flip to the other side halfway through baking.

Cheddar cheese substitute: For this recipe, I used cheddar cheese, but you could use any cheese you desire. Mozzarella, parmesan. For a vegan option try out Violife parmesan.
Other cooking suggestions: For this recipe, I preferred to bake these light and yummy zucchini bites, you could also cook them in air fryer for about 12-15 minutes at 375 degrees. These two ways of cooking them remain healthy and low in calories, but you absolutely pan-fry them if that’s what you prefer, they will remain amazingly delicious.
Dipping sauce suggestions: With sour cream, mayonnaise and other few seasonings, you get to make ranch dip for these cheesy zucchini bites, which is my regular go-to dipping sauce for this recipe.
However, you could also pair these zucchini bites with other dipping sauces, such as, marinara, aioli sauce, whipped Feta, whipped Ricotta, Tzatziki sauce or simply ketchup.
(Using garlic, egg yolk, lemon juice, mustard and olive oil, you get to make a great Mediterranean aioli sauce. Using tomatoes, onions, garlic and herbs, you could make an Italian inspired marinara sauce.)
Breadcrumbs substitute: You could use cracker crumbs, cornflakes, or almond flour for a gluten free option.
Storing/ Freezing/Reheating:Store any zucchini bites left in your fridge in an airtight container up to 4 days. This recipe is also freezer friendly, using cling film, you can wrap your zucchini bites, place them in airtight container, then stash in the freezer for up to 3 months.
Coat a baking sheet with nonstick spray and rewarm your zucchini bites in the oven. You could also reheat in the microwave or in an air fryer for about 2 minutes.
