Easy Cheesy Garlic Zucchini Bites

They could perfectly be eaten plain or dipped in ranch sauce, ketchup, or spicy marinara.

Ingredients
  

  • 2 medium size zucchinis shredded and drained well. (about 2 cups)
  • 1 ¼ bread crumbs
  • 1 cup shredded cheddar cheese you could also use parmesan or mozzarella
  • 1 large egg
  • ½ cup green onion finely chopped
  • 2 tablespoons dill chopped
  • 1 teaspoon kosher salt
  • 1 teaspoon garlic powder
  • Ranch sauce for serving

Instructions
 

  • Preheat your oven to 400 °F and line a baking sheet with parchment paper then set it aside.
  • Take a large bowl, add the shredded zucchini, panko bread crumbs, cheddar cheese, egg, chopped onion and dill then add salt and garlic powder. Mix the ingredients until well combined.
  • Using the zucchini mixture shape out small balls (tablespoon portions) then place onto the baking sheet. Repeat the same process with the remaining zucchini mixture..
  • Bake in your preheated oven for about 30 minutes until golden brown and crisp. Don’t forget to flip to the other side halfway through baking.
  • Serve warm, dip in ranch or a sauce of your liking (marinara)
