2medium size zucchinisshredded and drained well. (about 2 cups)
1 ¼bread crumbs
1cupshredded cheddar cheeseyou could also use parmesan or mozzarella
1large egg
½cupgreen onionfinely chopped
2tablespoonsdillchopped
1teaspoonkosher salt
1teaspoongarlic powder

Instructions
Preheat your oven to 400 °F and line a baking sheet with parchment paper then set it aside.
Take a large bowl, add the shredded zucchini, panko bread crumbs, cheddar cheese, egg, chopped onion and dill then add salt and garlic powder. Mix the ingredients until well combined.
Using the zucchini mixture shape out small balls (tablespoon portions) then place onto the baking sheet. Repeat the same process with the remaining zucchini mixture..
Bake in your preheated oven for about 30 minutes until golden brown and crisp. Don’t forget to flip to the other side halfway through baking.
Serve warm, dip in ranch or a sauce of your liking (marinara)
