Avocado Chicken Salad Lettuce Wraps

Healthy Avocado and Chicken Salad Lettuce Wraps – A light, delicious and low carb summer lunch!

Ingredients
  

  • 2 cups pre-cooked shredded chicken
  • ¼ cup Greek yogurt
  • ¼ cup mayonnaise
  • 3 tablespoons onions minced or finely chopped
  • 2 teaspoons lemon juice
  • 1 ripe avocado peeled and diced
  • About 16 leaves of lettuce
  • Salt and black pepper to taste

Instructions
 

  • Take a medium glass bowl, add in the shredded chicken, yogurt, mayonnaise and lemon juice. Mix well to combine the ingredients.
  • Season your mixture with salt and pepper to taste then add in the diced avocado and mix gently to combine (you can mash your avocado if that’s what you prefer).
  • Lay the lettuce leaves, fill in with the chicken salad and serve immediately!
