Broccoli Potato Soup with Cheddar Cheese

Ingredients
  

  • 1 or 2 tablespoons butter
  • 1 diced onion
  • 2 medium carrots diced
  • 3 garlic cloves (minced
  • 4 cups chicken stock
  • ¼ cup cornstarch
  • 1 cup milk
  • 2 large potatoes
  • 16 ounces broccoli florets
  • 1 ½ cups shredded cheddar cheese
  • ½ teaspoon salt
  • ¼ teaspoon ground pepper

Instructions
 

  • In a deep skillet set over medium high heat, melt 1 to 2 tablespoons of butter.
  • Add the diced onion and stir until it softens. (about 3 minutes)
  • Add the diced carrots with salt and pepper and cook for another 3 to 4 minutes.
  • Add and cook the garlic for about 30 seconds. Then add in the potato cubes and chicken broth.
  • Cover with a lid and let it simmer for about 10 minutes.
  • Place the broccoli in and keep simmering until the potatoes and broccoli are tender. (about 10 minutes)
  • Stir the cornstarch into milk in a small bowl, then add it to the soup.
  • Add in the shredded cheddar cheese until it melts. Enjoy every spoonful!
