shredded cheddar cheese

Instructions
In a deep skillet set over medium high heat, melt 1 to 2 tablespoons of butter.
Add the diced onion and stir until it softens. (about 3 minutes)
Add the diced carrots with salt and pepper and cook for another 3 to 4 minutes.
Add and cook the garlic for about 30 seconds. Then add in the potato cubes and chicken broth.
Cover with a lid and let it simmer for about 10 minutes.
Place the broccoli in and keep simmering until the potatoes and broccoli are tender. (about 10 minutes)
Stir the cornstarch into milk in a small bowl, then add it to the soup.
Add in the shredded cheddar cheese until it melts. Enjoy every spoonful!
