COFFEE CAKE MUFFINS RECIPE

Coffee cake muffins can be customized to suit different preferences and tastes. Ingredients
  

The muffin

  • 1 ½ cup all-purpose flour
  • ½ cup light brown sugar
  • 2 tsp baking powder
  • 1 tsp cinnamon
  • ¼ tsp baking soda
  • ¼ tsp salt
  • ¾ cup milk
  • 1/3 cup canola oil
  • 2 large eggs

The crumble topping

  • 1/3 cup granulated sugar
  • 1/3 cup light brown sugar
  • 1 tsp cinnamon
  • ¼ tsp salt
  • ½ cup unsalted butter melted
  • 1 ½ cups all-purpose flour

The glaze

  • ¼ cup confectioner’s sugar
  • ½ tsp vanilla extract
  • 1 tsp milk

Instructions
 

  • Line a muffin pan with paper liners and preheat the oven to 375°F (190°C).
  • To make the muffin batter, assemble the all-purpose flour, light brown sugar, baking soda, cinnamon, and salt in a large mixing basin.
  • Combine the milk, canola oil, and eggs in another bowl.
  • Compile the dry ingredients as well as the moist ones.5. In a separate basin, combine the granulated sugar, light brown sugar, cinnamon, salt, melted butter, and all-purpose flour to make the crumble topping. Mix until the mixture is crumbly and the ingredients are fully combined.
  • Spoon the muffin batter into each cup until it is approximately two-thirds full.
  • Top each muffin with a large quantity of the crumble topping.
  • In a separate bowl, mix milk, melted butter, and eggs. Once the wet ingredients are well combined, pour the wet mixture over the dry one. Use a spatula to mix everything until it is just combined.
  • Next, it’s time to spoon the batter into the prepared muffin pan. Fill each muffin cup.
  • Now, onto the crumble topping. Sprinkle it over the top of each muffin and gently press it into the batter. This will ensure that the topping sticks to the muffins as they bake.
  • Preheat your oven to the recommended temperature and then place the muffin pan inside. Bake for approximately 15-17 minutes .
  • Once the muffins are done baking, let them cool on a wire rack. you can then prepare the glaze, Simply mix the glaze ingredients until smooth. This may include powdered sugar, milk, and vanilla extract. Adjust the consistency by adding more powdered sugar or milk as needed.
  • Once the muffins have cooled, add the glaze on the top. You can use a spoon or a piping bag to achieve a neat and even drizzle. Allow the glaze to set before serving the muffins.

Notes

  • This recipe makes approximately 12 muffins. Feel free to adjust the measurements according to your desired quantity.
