Cut the 3 medium tomatoes, then place them in a small bowl and sprinkle with a dash of salt.
Peel the cucumbers and remove their ends. Slice the cucumbers a bit on the diagonal using a sharp knife or a vegetable slicer. Place in the bowl with the cut tomatoes. (you could chop the cucumber instead of having slices if that’s what you prefer)
Cut the ripe avocado in half, gently remove the stone and skin. Dice the avocado then throw in with the cucumbers and tomatoes.
Rinse, dry and chop some basil then add to the bowl with the diced onion.
Take another small bowl, add in the rest of the ingredients to make the dressing (vegetable oil, red wine vinegar, pressed garlic clove, dried oregano, kosher salt, granulated sugar and a pinch of black pepper). Whisk thoroughly until well combined.
Pour the dressing over the prepared vegetables and gently toss to combine.
Enjoy your delicious salad immediately or cover with a plastic wrap until ready to serve.
