Dinner Recipe to Impress | Stuffed Chicken Breast

Ingredients
  

  • 4 chicken breasts
  • Salt and Pepper
  • ½ teaspoon paprika
  • 1 tablespoon olive oil
  • For the Filling
  • 2 teaspoons olive oil
  • 3 cups spinach roughly chopped
  • 4 garlic cloves minced
  • 1/3 cup sun dried tomatoes
  • 4 ounces cream cheese softened
  • 1 cup shredded Mozzarella
  • 1/3 cup Parmesan grated
  • ½ teaspoon dried basil
  • ½ teaspoon dried oregano
  • ¼ teaspoon onion powder
  • 1 pinch red pepper flakes

Instructions
 

  • To prepare the Filling
  • Get your oven ready by preheating at 375 degrees F.
  • Add some oil in a large skillet set over medium heat (1-2 teaspoons). Add in the garlic and spinach; cook for about 3 to 4 minutes until wilted, then place in a bowl and let it cool.
  • Add the sundried tomatoes into the same bowl alongside the rest of the filling ingredients. Mix gently to combine, then put aside.
  • To prepare the chicken
  • Pat the chicken breast until dry, then while carefully using a sharp knife, cut a pocket for the stuffing.
  • Pack the filling into each chicken breast, then top with salt, pepper, and paprika.
  • Set a large skillet over medium high heat, then add oil. Once it’s heated, place two chicken breasts at a time and sear both side for about 2 to 3 minutes until golden brown.
  • Place the skillet in the oven (if it’s oven safe, use a baking dish instead) and bake for 17 to 20 minutes. Let it rest a bit before serving. Enjoy!
