Ingredients
  

  • 4 chicken breasts no skin or bones
  • 2 medium zucchinis sliced into circles
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper
  • ½ teaspoon paprika optional
  • 1 sliced lemon for garnish

Instructions
 

  • Get your oven ready by preheating your oven to 400 degrees Fahrenheit. Lay parchment paper or use some olive oil or non-stick spray to lightly grease your baking dish.
  • Next, season your chicken breasts. Combine the garlic powder, paprika, salt, pepper, and Italian seasoning in a small bowl. Use this mixture as a chicken rub to fully coat the chicken breasts.
  • Prepare the zucchinis. Take a separate bowl, add in the sliced zucchini rounds. Top with 1 tablespoon of olive oil and a pinch of salt and pepper. Mix to evenly cover the zucchini slices.
  • Then, arrange the ingredients in a baking dish. Place the seasoned zucchini slices in the greased baking dish, top them with the chicken breasts, then place any leftover zucchini rounds around the chicken pieces. Top the arranged dish with the remaining olive oil to keep everything tender and moist while cooking.
  • Finally bake, garnish and serve your dish. Bake for 20 to 25 minutes; until the zucchini is tender and the chicken reaches the internal temperature of 165 degrees Fahrenheit. Get the dish out of the oven, garnish with fresh lemon slices and parsley if desired. Enjoy!
