In a medium pot, add water, salt and the broccoli florets. Boil for about 5 minutes (check with a fork if it’s tender)
After you drain the broccoli, put on a chopping board and cut into small pieces using a sharp knife.
Take a medium sized mixing bowl, add in the broccoli pieces, eggs, shredded Parmesan, flour, and garlic. Season with salt and pepper to your liking, then mix all ingredients until well combined
Set a medium skillet or a non-stick pan over medium high heat. Add the olive oil and move your pan to cover its surface. (if you’re using a non-stick pan, use only a tiny drizzle of oil).
Scoop out about 2 tablespoons of the broccoli mixture and drop onto the heated pan, flatten a bit with the back of a large spoon or a spatula. Place them about 1 inch apart.
Cook your broccoli fritters about 2 to 3 minutes for each side or until crispy and golden brown.
Serve these broccoli fritters warm. Pair with yogurt or a different dipping sauce. Enjoy!
