Easy Broccoli Fritters Recipe

Tasty Broccoli Fritters with Parmesan Cheese Recipe – A Light, Crispy and Delicious Vegetarian Snack or Appetizer!

Ingredients
  

  • 1 pound steamed broccoli florets
  • 2 large eggs
  • ½ cup shredded Parmesan cheese
  • 4 tablespoons flour
  • 1 clove garlic minced
  • Salt and pepper
  • Some vegetable oil for frying

Instructions
 

  • In a medium pot, add water, salt and the broccoli florets. Boil for about 5 minutes (check with a fork if it’s tender)
  • After you drain the broccoli, put on a chopping board and cut into small pieces using a sharp knife.
  • Take a medium sized mixing bowl, add in the broccoli pieces, eggs, shredded Parmesan, flour, and garlic. Season with salt and pepper to your liking, then mix all ingredients until well combined
  • Set a medium skillet or a non-stick pan over medium high heat. Add the olive oil and move your pan to cover its surface. (if you’re using a non-stick pan, use only a tiny drizzle of oil).
  • Scoop out about 2 tablespoons of the broccoli mixture and drop onto the heated pan, flatten a bit with the back of a large spoon or a spatula. Place them about 1 inch apart.
  • Cook your broccoli fritters about 2 to 3 minutes for each side or until crispy and golden brown.
  • Serve these broccoli fritters warm. Pair with yogurt or a different dipping sauce. Enjoy!
