Easy Flourless Oatmeal Carrot Cake Recipe

Ingredients
  

  • 2 eggs
  • ½ cup honey
  • 2 carrots shredded
  • 1 cup oats
  • ½ teaspoon baking soda
  • 1 tablespoon cinnamon
  • ¼ cup butter room temperature
  • 1 teaspoon vanilla

Instructions
 

  • Before you start, set your oven to 300 degrees F.
  • Place all your ingredients (except the shredded carrots) in a blender or immersion blender if you have one and blend until smooth.
  • Add and stir the shredded carrots.
  • Place parchment paper in a small baking pan, pour in the mixture and spread using a spatula. Bake in your preheated oven for 20 to 30 minutes (check if it’s done by inserting a toothpick; it should come out clean).
  • Get it out of the oven and let it cool off for a while before serving. Enjoy!
