Preheat the oven to 350 degrees F. Coat your favorite loaf pan with coconut oil or a different oil of your choice, you could also use parchment paper instead.
Take a blender (or a food processor), add the rolled oats, baking soda, a dash of salt and cinnamon then mix until you reach flour like consistency.
(Pour the oat mixture in a bowl to blend the wet ingredients separately) Blend to combine the ripe bananas, 2 eggs at room temperature, and maple syrup to taste.
Pour back the oat mixture into the blender and mix well to combine.
In case you choose to any nuts, raisins or chocolate chips, add in to mix with the rest of the ingredients. Drop the batter into your loaf pan.
Top the batter with the remaining ½ banana, sliced either lengthwise or crosswise, as you prefer.
Bake for about 20 to 25 minutes. Use a toothpick or knife to check if your banana bread is done, insert it in the center, it should come out clean.
