Instructions
Start by preheating your oven to 425 degrees Fahrenheit, then prepare all your ingredients to make work easier. Place parchment paper on a large sheep pan and set aside. Cut the chicken breasts, peppers, and onions into strips. Combine all the seasoning ingredients in a small bowl to have them ready to use.
Place your chicken strips, peppers and onions on the sheet pan, drizzle with olive oil and lime juice, then top with the seasoning mixture and mix until all ingredients are fully covered. Keep everything arranged in a single layer.
Place the pan in the oven and cook for 20 to 25 minutes (give it a stir halfway through cooking time). If desired, check the internal temperature of the chicken: it should reach 165 degrees Fahrenheit. End with a broil (2 to 3 minutes) to get an extra smoky finish.
Keep the chicken fajita in the sheet pan, transfer to a plate or use to fill warm flour or corn tortillas. Squeeze some lime juice on top, garnish to taste and enjoy!
