Ingredients

  • 16 ounces frozen shredded hash-brown potatoes 1 bag
  • ¼ cup olive oil
  • 1 teaspoon garlic powder
  • 1 beaten egg
  • 1 cup shredded Cheddar cheese
  • Salt and pepper to taste I prefer to use fine grain table salt and fresh ground pepper

Instructions

  • Preheat your oven to 400 degrees. Lay a parchment paper over a baking tray then set aside.
  • Take a medium bowl, put in the frozen hash-browns, add in the olive oil, beaten egg, cheddar cheese, garlic powder, salt and pepper then mix well to combine. Your potatoes should be fully coated.
  • Scoop ¼ cup of potato mixture onto a greased baking sheet, flatten a bit into a small pancake shape.
  • Put your baking tray in the oven, bake for about 30 minutes until crispy and slightly brown. Flip the hash browns halfway through baking.
  • Top with more shredded cheese or sour cream. Enjoy!
