Preheat your oven to 400 degrees F and use some oil to grease a 9x13 baking dish
Set a large skillet over medium heat, add in the ground chicken and cook until no longer pink, then season with some salt, pepper, and garlic powder.
Stir in 2 cups of tomato sauce or marinara with the chicken. Lower the heat and simmer so it can absorb the sauce a bit. (it shouldn’t be runny)
Meantime, trim the zucchini and cut in half lengthwise, then scoop out the guts using a spoon or fruit baller.
Stir until melted 2 cups of shredded mozzarella and ½ cup of parmesan with the creamy chicken.
Transfer your zucchini halves into the baking dish, fill them with the prepared mixture, then top with the remaining Parmesan and Mozzarella.
Bake in the middle rack for 25 minutes until the zucchini is tender. Finally, Switch the oven to broil for a few minutes until the cheese is golden and bubbly.
Top with crispy bacon, extra cheese, or a bunch of fresh herbs for a nice pop of color. Pair with a green salad or grains for a complete meal. Enjoy!
