Two small apples or pearssliced or diced as you prefer
For Toppings
¼cupdried cranberries
¼cuppecanschopped
1/3cupcrumbled feta cheeselow fat
2tablespoonsnuts or seeds
For the Vinaigrette
3tablespoonsextra virgin olive oil
2tablespoonsapple cider vinaigrette
1tablespoonmaple syrup or honey
1.5teaspoonDijon mustard
1garlic cloveminced
Instructions
The first step, is to roast the butternut squash. On a baking sheet, mix the peeled and diced butternut squash with olive oil, salt and pepper, then roast for about 16 minutes in a preheated oven to 400 degrees F. (Flip the dices halfway through cooking). Remove from the oven and put side.
Cook the quinoa and set aside until needed.
Then make the dressing by whisking extra virgin olive oil, apple cider vinaigrette, maple syrup or honey, Dijon mustard and 1 minced garlic clove.
Use ½ of the dressing to massage the kale to soften a bit, then add it to a mixing bowl filled with the remaining half of the dressing.
Finally, assemble your salad by adding the apples, quinoa, and butternut squash and toss gently to combine.
Use some or all of the toppings mentioned above to garnish your healthy salad. Enjoy!
