Start by heating up the olive oil and sauté the chopped onion until it softens a bit. Add in the diced carrots and sauté as well for 1 to 2 minutes.
Then, add in the diced celery stalks and the uncooked lentils and combine. Next, pour in the water turmeric, cumin, salt, and black pepper and give them all a good stir.
Cover and keep the heat on high until it starts to boil, then reduce the heat. Keep the pot half covered as not to overflow.
Keep it on low heat and let it cook for 30 to 45 minutes until it’s done. Drizzle some parsley and some lemon juice and enjoy immediately!
