Ingredients
  

  • 1 cup of uncooked washed lentils red or brown
  • 1 medium onion chopped
  • 2 medium carrots diced
  • 1 teaspoon turmeric powder
  • ½ teaspoon ground cumin
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 4 cups of water
  • ½ a lemon juice freshly squeezed
  • 2 tablespoons olive oil
  • 1 tablespoon fresh parsley chopped

Instructions
 

  • Start by heating up the olive oil and sauté the chopped onion until it softens a bit. Add in the diced carrots and sauté as well for 1 to 2 minutes.
  • Then, add in the diced celery stalks and the uncooked lentils and combine. Next, pour in the water turmeric, cumin, salt, and black pepper and give them all a good stir.
  • Cover and keep the heat on high until it starts to boil, then reduce the heat. Keep the pot half covered as not to overflow.
  • Keep it on low heat and let it cook for 30 to 45 minutes until it’s done. Drizzle some parsley and some lemon juice and enjoy immediately!
