Mini Breakfast Omelets (Egg Muffins)

These Muffin Sized Omelets Are Tasty, Nutritious, and So Convenient for Busy Days!

Ingredients
  

  • Fried or air fried diced potatoes
  • 10 large eggs
  • ¼ cup milk
  • Shredded cheese
  • Seasoning to taste
  • Meat and veggies of choice I used smoked turkey and diced bell pepper

Instructions
 

  • First, set your oven to 350 degrees to warm up and generously coat a regular muffin pan with non-stick spray.
  • Place some crispy air fried potato cubes in each muffin cup. Distribute evenly the chosen meat and veggies into each muffin cup. (I used pre-cut smoked turkey and green and red bell peppers).
  • Whisk together the milk, eggs, and seasoning then pour the mixture into each cup as evenly as possible.
  • Sprinkle the shredded cheese on top and place the muffin pan in the oven to bake for 20 minutes or until it’s cooked through. Enjoy!
