Old-Fashioned Fried Salmon Patties

Ingredients
  

  • 1 can of salmon
  • 2 eggs
  • 1/3 cup of cornmeal
  • 1 tablespoon of flour
  • 1 small chopped onion sub with onion powder
  • Salt and pepper
  • Oil

Instructions
 

  • Empty the canned salmon in a small bowl and make sure to remove all fishbones. Transfer the fish meat to a larger mixing bowl and crack the eggs on top. Add in the chopped onion, flour, salt, pepper and cornmeal (add just a dash of cornmeal until your reach a desirable consistency). Mix all these ingredients thoroughly until well combined.
  • Take a scoop of the salmon mixture and form a ball by rolling between your palms, then flatten a bit and place on a plate. Once you’re done, place a pan on the stove and set it over medium high heat, then add in the olive oil to heat up. Once heated, reduce the heat to medium, then carefully place the patties on the pan. Let them cook on both sides until crisp brown for about 5 to 10 minutes.
  • Place on a serving plate, paired with your favorite dipping sauce. Enjoy!
