To make sure your oven is ready when needed, preheat it at 350 degrees Fahrenheit. Prepare your baking dish by spreading chopped onion over the dish topped with butter pieces. Place in the oven and bake for 15 minutes; until the onion start to brown.
While the onions are baking, prepare the chicken rub by mixing dried thyme, garlic powder, paprika, onion powder, salt and black pepper. Next, use the mixture to rub the chicken thigh fillets until fully covered.
Once the onions are done baking, take the dish out of the oven to top the onions with the uncooked rice. Mix to combine both ingredients. Pour in the water, chicken stock, and add the minced garlic, then mix again to combine.
Gently arrange the seasoned chicken on top of the rice (make sure the chicken thigh fillets are separated). Use foil to cover the baking dish and let it bake for 30 minutes, giving the rice enough time to cook and take in the flavors)
After half an hour, uncover the baking dish and lightly spray the chicken thighs with oil spray then put it back in the oven.
Finally, garnish your baked chicken and rice with fresh parsley to inject some color. Enjoy!
