Ingredients
  

  • 1- pound chicken breast deboned and skinless
  • 1 tablespoon extra-virgin olive oil
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon cumin
  • ½ teaspoon Kosher salt
  • ½ teaspoon black pepper
  • 2 ¼ cups chicken broth
  • 1 can nacho cheese sauce
  • 1 can Rotel
  • 1 ½ cups uncooked white rice

Instructions
 

  • Cut the chicken breast into small cubes, pieces or strips.
  • Choose a large skillet with higher sides and a lid, set it over medium high heat to heat the olive oil, then add the chicken pieces with the dried seasonings. Stir from time to time until the chicken is cooked (at this point if there is any excess liquid, it’s best to drain it).
  • Add in the nacho cheese sauce, chicken broth and Rotel. Stir well then bring to a boil. Once it starts boiling, add in the uncooked long grain white rice. Cover the pan, reduce the heat to medium low and cook for 20 to 25 minutes. (the rice should be tender and the liquid soaked up)
  • Enjoy right away with your favorite toppings!
