Start by preparing your filling. Wash the spinach and chop it, then crumble the Feta cheese in a bowl. At this point, you can prepare any add-ins you want to use like sun dried tomatoes, chicken, or mushrooms.
The next step is assembling the Quesadillas. Put the tortillas on a clean and flat surface, then evenly spread the chopped spinach and crumbled Feta cheese over one half. Top with sliced tomatoes or any other add-ins if desired, then fold the tortilla in half and press gently to secure.
Set on a non-stick skillet over medium heat and add in a small amount of butter or olive oil. Gently place the folded tortilla in the skillet and let it cook for 2 to 3 minutes per side; until it becomes golden and crisp.
Transfer the cooked quesadilla to a cutting board, then cut it in half using a sharp knife or cut it into 4 wedges if desired. Pair with your favorite dip and enjoy!
