First step is preparing the chicken. Cut the chicken breast into ½ inch dices and place them in a bowl. Mix in the olive oil, garlic powder, onion powder, paprika, salt and pepper. Mix the chicken to cover with the seasoning and let it sit for about 5 minutes to soak up the flavors while preparing the other ingredients.
Second step is cooking the chicken. Set your pan over medium heat and add in the seasoned chicken pieces, making sure not to overcrowd your pan (cook in batches if necessary). Give the chicken pieces time to achieve a golden crust before mixing (about 3 minutes each side). The chicken should be thoroughly cooked but still succulent and juicy.
The third step is assembling and folding the wrap. Lightly heat your tortillas to make them easier to fold. Coat generously each tortilla with garlic sauce, making sure to keep the edges clear. Spread your cooked chicken evenly in the center of your tortilla, then add the shredded cheddar and mozzarella on top. Lift the bottom edges over the filling, then fold in the sides. Roll firmly from the bottom, securing the sides as you roll.
Fourth and final step is crisping. Put your wrapped tortilla back in the back to crisp up over medium heat. Gently press using a spatula and cook for about 2 to 3 minutes on each side; until the cheese melts and the outside layer turns crispy and golden brown.
