Shrimp Avocado Cucumber Bites

These Shrimp Avocado Cucumber Bites are light, bright, flavorful, and so elegant!

Ingredients
  

  • For the shrimp and cucumber bites
  • 1 tablespoon oil sub with butter if desired
  • 2 tablespoons creole seasoning
  • 1 pound shrimp peeled and deveined
  • 1 cucumber sliced
  • ¼ cup remoulade sauce optional
  • For the avocado sauce
  • 1 avocado mashed
  • 1 thinly sliced green onion or chopped
  • 2 tablespoons chopped cilantro use parsley if desired
  • 1 tablespoon lemon juice
  • Salt and Pepper

Instructions
 

  • Add the oil to a heavy bottomed skillet set over medium high heat. Add in the shrimp and the seasoning and cook for about 2 to 3 minutes on each side.
  • Wash the cucumber, cut off the ends and cut the avocado into slices (Don’t cut too thin.)
  • Prepare the avocado sauce by mixing the mashed avocado, chopped green onion, chopped cilantro, lemon juice, salt, and cayenne.
  • Top each cucumber slice with avocado sauce shrimp and remoulade sauce. Enjoy!
