Cook the chosen rice according to package instructions.
Peel the cucumber and cut into slices, then peel the carrot and slice thinly or grate.
Cut the chicken breast into small pieces like cubes or slice lengthwise if you like.
Mix the chicken with oil and all the spices in the ingredient list. Lay the chicken pieces in the bottom of your air fryer for 12 minutes (air fryer should be preheated at 400 degrees F).
In the meantime, combine honey, soy sauce, rice vinegar, garlic, sesame oil, and ground ginger in a sauce pot and let it boil. Once it starts boiling, add the cornstarch and let it boil for 4 to 5 minutes; until the sauce reaches the desirable thickness.
Grab your serving bowls, add in the cooked rice, layer the juicy chicken pieces and the sliced veggies. Cover with the prepared sauce. Finally drizzle on top some soy sauce or spicy mayo. Enjoy!
