Cut your tomatoes into 1/3-inch-thick slices. Nicely arrange the tomato circles on a large plate.
To make the marinade, mix olive oil, red wine vinegar, finely diced red onion, minced garlic, lemon juice, freshly chopped basil and parsley, salt and pepper according to taste. Whisk thoroughly all ingredients in a bowl, then pour over the sliced tomatoes.
Spread the marinade to cover all tomato slices and let it rest for at least 2 hours before serving. (you can flip tomatoes while marinating but it’s optional)
Serve and Enjoy with any kind of grilled meat!
