Place parchment paper on a baking sheet and preheat your oven to 375 degrees F.
Wash, rinse, and dry your potatoes, then use a fork to poke each one 8 to 10 times. Rub the potatoes with olive oil, season with salt, then place them on the baking sheet. Bake for about 50 to 60 minutes, then let them rest until they’re cool enough to touch.
Preheat your oven to 450 degrees F. Cut the potatoes in half (lengthwise), then using a spoon remove some of the flesh, until you’ve got about ¼ inch inside the skin.
Place the butter in a bowl and melt in the microwave, then add in the garlic and onion powder and use the mixture to brush the halved potatoes from all sides. Place them on the same baking sheet you used earlier and bake for about 20 minutes; 10 minutes for each side.
Use some shredded cheese and smoked turkey slices or chunks to fill in the halved potatoes, then place back in the over to cook for about 5 minutes. Top with some finely chopped green onion or drizzles of sour cream. Enjoy!
