What ingredients do I need for this recipe?

Chicken Quesadillas

6 medium flour tortillas
2 cups Mexican cheese
1-pound chicken breast, cut into small chunks or strips
1 tablespoon vegetable oil
½ large diced bell pepper (any color you prefer)
½ finely diced yellow onion
1 tablespoon taco seasoning
2 tablespoons butter (unsalted)

How to make chicken quesadillas (Fajita style):

Gather all the ingredients and supplies. Make sure everything is washed, cut and measured before cooking. This simple step is absolutely needed for a free-stress, enjoyable and smooth cooking experience.

Put the vegetable oil in a large skillet set over medium high heat. Add in the diced bell pepper and yellow onion.

Chicken Quesadillas

Add in the chicken breast pieces with the taco seasoning. Combine and cook about 4 minutes.Mix and cook for about 5 minutes, until cooked through.

Add a bit of butter in another pan and place a tortilla on top. Add the Mexican cheese, the chicken and vegetables filling, and cover with more cheese. Fold the tortilla over, only flip once, until golden brown (cook 3 minutes per side and make sure your cheese has melted)

Repeat the same steps with the rest of the tortillas, cheese, and chicken mixture.

Crispy flour tortillas loaded with creamy juicy goodness. One of my family’s favorite Mexican dishes, made with simple pantry friendly ingredients and suitable for all occasions. Choose your desired tortilla and adjust its filling to suit your preference.
This recipe makes up a perfect meal for lunch, dinner or even as an appetizer.
I have made these quesadillas for my family for so many times and this recipe never fails to amaze. It is such a quick, affordable, tasty and simple recipe. Perfect meal even for the pickiest eaters.

Helpful Tips and Variations:

Flour tortillas substitute: For less calories, you can use other healthier alternatives such as, whole wheat tortillas, corn tortillas, sweet potato tortillas or lentil tortillas.
Chicken substitute: What is important in a quesadilla is to have the tortilla and cheese so all the other meat or vegetable fillings can easily be changed or modified. So if you are not a big fan of chicken, swap it for some ground beef, pork, turkey or skip the meat altogether and use only vegetables.
For extra flavor: If you have enough time to spare, make sure to let your chicken breast pieces marinate at least for 3 to 4 hours to fully absorb the flavors (for the chicken marinade: mix some water, cilantro, lemon juice, salt and pepper to taste then blend it all until smooth)
Baking the Quesadillas: Brush a baking sheet with some olive oil, fill and fold your chicken quesadillas then bake for a few minutes. Gently flip your tortillas, brush the other side with some olive oil then bake until crispy brown. (your quesadillas should be brown and crunchy and your cheese perfectly molten)
Cheese: For this recipe, I prefer to use a blend of pre shredded Mexican cheese, but Mozzarella, Jack, Asadero or Cheddar will work as well.
Filling: Make sure your filling is cool before assembling your tortilla.
Prep your quesadillas in advance: Make your filling ahead to save up some time, let it cool then freeze or refrigerate. Reheat in the microwave or in a pan when it’s time to eat.
Additional components: You can add some mushrooms, corn kernels, zucchini or some slices of fresh jalapenos for an extra kick of heat.
Storage: You can store your leftover chicken quesadillas in the fridge for up to 3 days. Reheat in a skillet when needed.
