1-poundchicken breastcut into small chunks or strips
1tablespoonvegetable oil
½large diced bell pepperany color you prefer
½finely diced yellow onion
1tablespoontaco seasoning
2tablespoonsbutterunsalted
Instructions
Put the vegetable oil in a large skillet set over medium high heat. Add in the chicken breast pieces with the taco seasoning. Combine and cook about 4 minutes.
Add in the diced bell pepper and yellow onion. Mix and cook for about 5 minutes, until cooked through.
Add a bit of butter in another pan and place a tortilla on top. Add the Mexican cheese, the chicken and vegetables filling, and cover with more cheese. Fold the tortilla over, only flip once, until golden brown (cook 3 minutes per side and make sure your cheese has melted)
Repeat the same steps with the rest of the tortillas, cheese, and chicken mixture.
