Ingredients:
2 large or medium sized zucchini
¼ cup marinara sauce or any other pizza sauce
½ shredded Mozzarella (or provolone, add cheese according to taste)
Salt to taste
1 teaspoon Italian seasoning (optional)
Chopped fresh or dried basil, thyme, or any other herbs you prefer
Instructions:
Preheat your oven to degrees 375 degrees F. Lay parchment paper on a baking sheet or use some cooking spray.
Cut your zucchini into ¼ inch slices. Put your zucchini slices on baking sheet then sprinkle some salt to taste.
Top your zucchini slices with some pizza sauce, shredded cheese and add your own favorite pizza herbs and seasoning.
Bake in the preheated oven for about 10 to 15 minutes or until your zucchini is tender and your cheese is melted and bubbly.

Can I replace zucchini with a different vegetable? You can replace the zucchini with eggplant. I have already tried the same recipe with eggplant before and it turned out just as great.
How can I replace the regular pizza sauce? If tomatoes upset your stomach, I totally get it, just switch the marinara sauce with a different sauce of your liking. You can use pesto, a vegetable puree, crème fraiche or a white base sauce made with your favorite cheese as the main component.
Can I add meat to this recipe? Certainly! You can drizzle some ground lean beef, or you can add some chopped chicken, turkey, or pork sausage.
Can I add other veggies as well? For sure, if your zucchini slices are large enough, you can add some thinly sliced red onion, sliced mushrooms or green pepper. If your zucchini is small however, cut it lengthwise; it’ll give you enough space to hold the sauce, cheese and veggies.
Which herbs Can I use for this recipe? Feel free to use whatever herbs you like to use on your regular homemade pizza. I personally like using some dried basil, oregano, parsley, thyme and garlic or onion powder. Sometimes, I add chili flakes as well.
What toppings works for this recipe? Just the way I prepare my mini pizzas at home, I like to top these zucchini slices with mini pepperoni or sliced black olives.
Can I store any leftovers? Sure! Let your zucchini bites cool down a bit before you store any leftovers in the fridge, It keeps good for up to 4 days. When needed, add a little cheese on top if you like then reheat in the microwave.
