Turn on the oven to preheat at 350 degrees Fahrenheit and coat a loaf pan with non-stick spray and flour.
In a medium bowl, blend the flour, baking powder, and salt, then put it aside.
Add the butter, sugar, and vanilla to a different bowl and beat the mixture using an electric mixer on medium high speed for about 3 to 4 minutes. Incorporate the eggs gradually, whisking until fully blended.
Turn the mixer to low speed and gradually add half of the flour mixture and half of the milk, alternating between the two. Then add the remaining flour and milk and mix to combine.
Mix the brown sugar, apple pieces, and ground cinnamon in a bowl, then place it aside.
To prepare the topping, combine the brown sugar and cinnamon in a small bowl and put aside.
Transfer half of the bread mix into the loaf pan and cover with half of the apple mix. Using a knife make swirls in the batter without overdoing it. Add the remaining batter and top it with the rest of the apple mixture. Swirl through the bread batter with a knife and garnish with the cinnamon sugar mixture on top.
Place the loaf pan in the oven and bake for about 45 to 55 minutes (If you insert a toothpick in the center it should come out clean; only a few moist crumbs should cling because of the soft apples).
Pull the pan out of the oven and cool for 15 to 20 minutes. In the meantime, combine the glaze ingredients. Carefully get the bread out of the pan and place it on a tray. Drip the glaze over the soft apple bread and let it cool. Slice and Enjoy!
