Instructions
 

  • To make creamy lemon squares, you will need a few simple ingredients, including shortbread crust, lemon juice and zest, eggs, and sugar. Let’s walk through the steps needed to make these irresistible squares.
  • To make the shortbread crust, first, preheat your oven to 350 degrees Fahrenheit. Then, in a large bowl, combine the flour, sugar, and salt. Using your arms or a pastry cutter, paintings the butter into the flour aggregate till it resembles coarse crumbs
  • Add in 1 tablespoon of cold water and mix until the dough comes together. Press the dough into a 9-inch square baking pan lined with parchment paper. Bake the crust for 20-25 mins or till golden brown. While the shortbread crust is baking, let’s put together the lemon filling
  • In a medium bowl, whisk together the lemon juice, lemon zest, eggs, and sugar until thoroughly combined. Slowly pour the mixture over the hot crust, making sure to evenly distribute it. Bake for another 20-25 minutes, or until the filling is set.
  • Once the lemon filling is done baking, remove it from the oven and let it cool completely. Once cool, switch to the fridge and sit back for a minimum 2 hours.
  • To finish the lemon squares, remove them from the fridge and cut into squares. Dust with powdered sugar before serving and enjoy!
