Easy Butter Steak Bites with Potatoes

Ingredients
  

  • 1 ½ pounds sirloin steak. cut into 1 inch cubes
  • 1 pound Yukon potatoes. peeled and diced
  • 1 tablespoon olive oil
  • 4 tablespoons butter. divided
  • 4 garlic cloves. minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried rosemary
  • ½ teaspoon salt
  • ½ teaspoon pepper

Instructions
 

  • Set a large cast iron skillet over medium heat, add 2 tablespoons of butter and olive oil to the pan.
  • Once the butter melted, add diced potatoes, minced garlic, oregano, rosemary, salt and pepper. Cook for about 4-5 minutes.
  • Stir and cook your Yukon potatoes with the seasonings for an additional 4 minutes until fork-tender.
  • Remove your potatoes and set aside on a plate or in a bowl.
  • Put back your cast iron pan on the stove and turn it to high heat. Add the 2 tablespoons of butter remaining.
  • Add in the sirloin steak bites and cook for 1 minutes, not turning.
  • Stir your steak bites for an additional 1-2 minutes or until cooked to the desired degree of doneness.
  • Remove your skillet from the stove and toss your cooked potatoes with the meat bites.
  • Sprinkle some freshly chopped parsley, if desired.
