Set a large cast iron skillet over medium heat, add 2 tablespoons of butter and olive oil to the pan.
Once the butter melted, add diced potatoes, minced garlic, oregano, rosemary, salt and pepper. Cook for about 4-5 minutes.
Stir and cook your Yukon potatoes with the seasonings for an additional 4 minutes until fork-tender.
Remove your potatoes and set aside on a plate or in a bowl.
Put back your cast iron pan on the stove and turn it to high heat. Add the 2 tablespoons of butter remaining.
Add in the sirloin steak bites and cook for 1 minutes, not turning.
Stir your steak bites for an additional 1-2 minutes or until cooked to the desired degree of doneness.
Remove your skillet from the stove and toss your cooked potatoes with the meat bites.
Sprinkle some freshly chopped parsley, if desired.
