Fruit Salsa with Cinnamon Sugar Tortilla Crisps

During summer, I love trying out new simple, healthy and refreshing recipes, especially if they include some fresh summer produce.

Ingredients
  

  • For the cinnamon chips:
  • 10 10- inch flour tortillas
  • 1/3 cup sugar
  • 1 teaspoon cinnamon
  • Non-stick cooking spray you can use butter-flavored cooking spray
  • For the fruit salsa:
  • 2 apples granny smith or honey crisp apples
  • 1 lemon
  • 2 kiwis
  • 1 pound strawberries
  • ½ pound raspberries
  • 1 tablespoon brown sugar
  • 3 tablespoons fruit preserves either strawberry or raspberry

Instructions
 

  • Making the cinnamon Sugar Tortilla Crisps:
  • Take a small bowl, add the cinnamon and sugar, stir to combine then put it aside.
  • Take three flour tortillas at a time, spray each side with a little cooking spray, dust thoroughly with cinnamon and sugar on each side.
  • Cut each 3 stacked flour tortillas into 12 wedges using a pizza cutter to get some nicely clean cuts. Repeat the same process for the rest of the tortillas.
  • Gently place the tortilla wedges on an ungreased baking sheet then put it in an oven set over 350 degrees for about 12 minutes or until crisp.
  • Making the fruit Salsa:
  • Peel and chop the apples. Add some freshly squeezed lemon juice over the diced apples.
  • Finely chop the strawberries and the kiwis then add to the diced apples. Add in the brown sugar and fruit preserves to the bowl. Stir gently to combine all ingredients. If you choose to add the raspberries, keep in mind that they will break apart a bit but that’s totally fine.
  • You can either let your salsa to rest a bit to serve it at room temperature, or serve it chilled. Enjoy!
