Turn on the oven to preheat, set at 400 degrees F and prepare a baking sheet by lining parchment paper.
Wash the chicken breast and dry by patting with paper towel and cut off any fat or tendons. On a cutting board, cut the chicken breast into bite sized pieces.
Place the chicken bites in a large bowl with one tablespoon of olive oil.
In a bowl or colander, gently scrub the potatoes under cold water. Once clean, pat the baby potatoes to dry, cut them in half, then place in a different bowl along one tablespoon of olive oil.
In a small bowl, combine the poultry seasoning with paprika and pepper. Add half of the seasoning to the potatoes and sprinkle the remaining half on the chicken bites and mix gently to combine.
Place the seasoned potato pieces on the baking sheet and cook for 20 minutes until roasted.
While the potatoes are cooking, set a large skillet over medium high heat and add in the seasoned chicken. Cook for about 7 to 10 minutes until cooked. Add in the butter and garlic and stir to combine everything.
Add the roasted potato chunks to the cooked chicken, combine gently, then turn off the heat.
Add the garlic parmesan sauce and mix to combine, then sprinkle the cheese to evenly coat the chicken and potatoes. Cover the skillet with a lid for about 5 minutes to melt the cheese. Enjoy this savory delight!
