Ingredients
  

  • 1 pound smoked sausage
  • 2 pounds baby potatoes quartered
  • 1 medium onion chopped
  • 2 tablespoons olive oil
  • 1 tablespoon smoked paprika
  • 1 teaspoon garlic powder
  • Salt and pepper
  • Fresh parsley chopped (optional garnish)

Instructions
 

  • Turn on your oven and set it at 400 degrees to preheat. Prepare your favorite casserole or baking dish by lightly greasing with oil or butter.
  • Place your potato pieces, smoked sausage slices and chopped onion in a medium size mixing bowl. Drizzle with some olive oil and sprinkle garlic powder, smoked paprika, salt and pepper (be generous with the seasoning if desired).
  • Give the ingredients a good mix to fully cover with the seasoning, then spread evenly the sausage and potatoes mixture in your prepared baking dish.
  • Place it in the oven to bake for 40 to 45 minutes, mixing it halfway through cooking time to make sure everything is cooked perfectly on all sides. Your potatoes should look golden and form a crispy outside layer while remaining tender on the inside.
  • Sprinkle some freshly chopped parsley on top for a nice pop of color, drizzle some shredded cheese if desired and enjoy your dish right away!
