Ingredients
  

  • 1 3 ish pound butternut squash.
  • 2 tablespoons olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • ½ teaspoon garlic powder
  • Salt and pepper

Instructions
 

  • Using a veggie peeler, peel the squash cut it in half lengthwise and remove the seeds. Next cut up the squash into 1 inch cubes (use a sharp knife).
  • Place the cubes into a large bowl, drizzle them with olive oil and gently toss to cover the butternut squash.
  • Sprinkle the seasoning on top (cumin, garlic powder, salt, pepper, chili powder). Gently mix again to cover the cubes evenly.
  • Lay the seasoned butternut squash cubes on a foil lined baking sheet lightly coated with nonstick spray.
  • Place in a previously preheated oven at 425 degrees F for about 40 minutes and turn the cubes halfway through baking time.
  • Remove the tray from the oven once the butternut squash is tender and browned around the edges. Enjoy!
