Easy Garlic & Herb Grilled Eggplant Recipe – A hearty and Flavorful Vegetarian Summer Dish!

I usually have a lot of eggplants in my fridge during summer time, if you also have extra eggplants forgotten in your kitchen and don’t know how to use them, try out this recipe at your next family barbecue. This is my absolute favorite way to prepare this tricky vegetable. Eggplant slices coated with a flavorful and simple mixture of seasoning and herbs.
Perfectly tender grilled eggplant served as a side dish or appetizer. Top with some feta cheese and your favorite chopped herbs or serve with some barbecue sauce, chimichurri, Tahini sauce, or any garlic and herb based sauce you prefer.
It doesn’t matter if you like eggplant or not, this simple and flavorful recipe is unforgettable and guaranteed to please kids and adults alike. These grilled eggplants make a great side dish for a Summer BBQ among friends and family.

2 large eggplants
2 teaspoons salt
½ cup extra virgin olive oil
3 crushed garlic cloves
2 tablespoons chopped fresh parsley
2 tablespoons chopped fresh oregano

How to make this tasty grilled eggplant recipe:

Cut the eggplants into ¼ inch slices (or to your desired thickness) then sprinkle some salt on each slice. Set aside for about 15 minutes to remove extra moisture and bitterness. Brush each slice with a paper towel to remove the salt and moisture.
Preheat your barbecue to medium heat.
Take a large dish, mix together the olive oil, crushed garlic, chopped parsley, chopped oregano, salt and pepper.

Put each eggplant slice in the dish, flipping it to cover both sides with oil and seasoning.

Grill your eggplant slices for about 6 minutes each side. The slices should turn golden brown and have beautiful grill marks.
Once the eggplant slices are cooked. Remove from the grill and place again in the oil, herb and garlic mixture. Flip to coat both sides then place in a serving plate or platter.
