Fried or air fried diced potatoes
10 large eggs
¼ cup milk

How to make these Easy Mini Breakfast Omelets (Egg Muffins)?
First, set your oven to 350 degrees to warm up and generously coat a regular muffin pan with non-stick spray.
Place some crispy air fried potato cubes in each muffin cup. Distribute evenly the chosen meat and veggies into each muffin cup. (I used pre-cut smoked turkey and green and red bell peppers).
Whisk together the milk, eggs, and seasoning then pour the mixture into each cup as evenly as possible.
Sprinkle the shredded cheese on top and place the muffin pan in the oven to bake for 20 minutes or until it’s cooked through. Enjoy!

How can I replace the air fried potato dices? You can use tater tots; they’re perfect for this recipe.
Which meat can I use for these Egg Muffins? You can use diced ham, crispy bacon bits, breakfast sausage, ground turkey, salami, pepperoni, or cooked chicken (diced or shredded).
Which veggies should I use? I have only used diced bell peppers in this recipe to add, color, and texture to this recipe, but there are different other veggies which would work wonderfully. Use spinach, scallions, zucchini, tomatoes, broccoli, mushrooms, or kale. You can add some diced jalapeno or diced chili peppers for a bit of heat.
Which cheese works best? You can use Mozzarella, cheddar, Swiss cheese, Feta, Parmesan or Monterey Jack. You can even use a combination of soft and hard cheeses
How can I replace the muffin pan? If you don’t have a muffin pan, you can use Silicone baking molds, cupcake liners, ramekins, or any small ceramic jars as long as they’re oven safe.
Can I air fry these mini breakfast omelets? Of course! Preheat it to 320 degrees F and grease silicone molds or ramekins then place in the air fryer basket and cook for 10 to 15 minutes. Give them enough time to cool, then remove from the molds.
How can I store any leftovers? Once cooled, place the egg muffins in resealable plastic bag or container and place in the fridge for up to 5 days. Use parchment paper to separate the muffins.
Can I freeze this recipe? Definitely! Place them in a freezer bag or freezer safe container for 3 months. Don’t forget to wrap each one with parchment paper to keep them from sticking. Microwave or place in the oven to reheat once needed.
