What ingredients do I need for this recipe?
4 tablespoon salted butter
¾ cup smooth peanut butter
10 ounces marshmallows
7 cups cornflakes cereal
1 ounce marshmallows (needed for the mixing at the end)
How to make this peanut butter cornflake cookies recipe:
Melt the butter and the peanut butter in a large pot over medium-low heat. Add the 10 ounces of mini marshmallows while constantly stirring until completely melted, then remove from heat.
Add in the cornflakes, stir until fully coated. Mix in the remaining 1 ounce of mini marshmallows and the peanut butter chips then gently combine your mixture without over mixing.
Use some nonstick cooking spray on a large scooper to scoop out about 10 peanut butter cornflakes balls (equal in size) onto a parchment baking sheet. Gently lay out the peanut butter cookies to about 1-inch thickness. Your cookies should still be fluffy so don’t pack them to avoid density.
Let your cookies set for 20 to 30 before serving.

Helpful Tips and Variations:
What cornflakes cereal is best to use?
For this recipe, I use regular flaky cereal, choose any type you prefer. Keep your cornflakes whole and not crunch for the best crunch and texture.
What peanut butter should I use?
It’s mostly preferable to use chunky peanut butter as it gives the cookies more peanutty flavor.
Can I use unsalted butter?
Certainly! Both salted and unsalted butter work for this recipe.
How can I safely refrigerate or freeze these cookies?
Avoid piling up all your cookies in a container, they’ll most certainly clump. So instead, spread your cookies in the bottom of the container, use a piece of wax paper to cover then continue layering the cookies. Safely store your container in the fridge, they will remain good for about a week.
If you would like to store them for longer, put them in your freezer, they will keep for a few months (The will remain tasty but expect to have a slight change in texture).
