Cucumber Tomato & Avocado Salad
A light, delicious, and refreshing salad with cucumber, tomato and avocado.
This simple cucumber tomato and avocado salad recipe has ravishing flavors and inviting colors and it will remain one of my favorite salads to make.
This vibrant salad is THE perfect summer recipe. Freshly chopped tomatoes, cucumbers, avocado, basil and onion covered with the most flavorful dressing. This salad is not only flavorful but it is also low in calories and packed with nutritional benefits making it the best and easiest summer recipe for all types of diets.
What are the ingredients needed for this recipe?
3 ripe tomatoes (medium size)
3 firm baby cucumbers
1 ripe avocado
½ diced red onion (medium size)
½ fresh basil (washed, dried and chopped)
1 pinch of salt
6 tablespoons extra virgin olive oil.
3 tablespoons red wine vinegar
¾ tablespoons kosher salt
¾ tablespoons granulated sugar
1 pinch black pepper
How to make this fresh Cucumber Tomato and Avocado salad:
Cut the 3 medium tomatoes, then place them in a small bowl and sprinkle with a dash of salt.
Peel the cucumbers and remove their ends. Slice the cucumbers a bit on the diagonal using a sharp knife or a vegetable slicer. Place in the bowl with the cut tomatoes. (you could chop the cucumber instead of having slices if that’s what you prefer)
Cut the ripe avocado in half, gently remove the stone and skin. Dice the avocado then throw in with the cucumbers and tomatoes. Rinse, dry and chop some basil then add to the bowl with the diced onion.
Take another small bowl, add in the rest of the ingredients to make the dressing (vegetable oil, pressed garlic clove, kosher salt, granulated sugar and a pinch of black pepper). Whisk thoroughly until well combined.

It’s fresh and packed with flavor; Using fresh vegetables and a homemade dressing gives it a rich scrumptious taste. Finally, it’s simple and easily customizable; you can easily modify this salad to suit your taste, adding as many other ingredients as you wish.
I love making it as a side dish for a Sunday barbecue, a picnic on a sunny day or a family trip to the beach.

Basil substitute: This cucumber Tomato and Avocado salad recipe is inspired by Italian cuisine, thus the fresh basil choice. You could however substitute the fresh basil for some baby spinach, parsley, oregano, cilantro, arugula or mint.

Nuts and seeds: Walnuts, pistachios, almonds, peanuts, pumpkin seeds, sesame seeds, and chia seeds are all considered a great option for a salad topping. They are highly nutritious and beneficial. They also add the perfect crunchiness to your salad.

I personally prefer to use feta cheese or parmesan, but other types of cheese will work too (blue cheese, cheddar, Mozzarella, Queso fresco or Swiss cheese)

Storage: You can store any salad leftovers up to 1 day in the fridge. The avocado will brown a bit and the veggies can get a bit liquidy but the taste will definitely remain the same. Add in some life to your salad with a squirt of lime or lemon juice.
Leftover ideas: For an additional source of protein, add some grilled chicken, roasted salmon, or even some diced hard-boiled eggs to your salad. You could also add your leftovers to some pasta or quinoa for a healthier option.

I love to serve this cucumber tomato and avocado salad as a side to other fun and summer-like dishes such as grilled chicken, burgers, hot dogs, grilled chicken kebabs, Hawaiian chicken skewers, grilled salmon, Lamb chops or pork chops.
If you want to serve this appetizing salad as a main dish, I suggest adding some cheese and nuts for a rather pleasant crunch and piquant flavor. Pair it with some tortilla strips or add in a protein to taste. (chicken is one of the best options, but I prefer to add some drained canned tuna fish).
