1 (8-inch) flour tortilla
2 tablespoons good quality peanut butter
½ medium banana (sliced)
1 tablespoon chocolate chips

Take your flour tortilla and put it on a cutting board or a flat surface, spread the peanut butter over the whole tortilla.
Cut your half banana thinly then place the slices over half of the tortilla. Sprinkle with good quality chocolate chips over the same half of the tortilla.

Fold your tortilla to close. (the peanut butter will hold your quesadilla together the same way cheese does in a regular quesadilla)
Put your prepared quesadilla in a large frying pan set over medium-low heat, cook on both sides until it’s lightly golden brown and crispy on the sides.

Your chocolate and banana slices should be gooey. (adding butter or oil to cook the quesadilla is completely optional, I chose not to do so for this recipe)

Banana: Use any ripe or over ripe bananas you have on hand. Use them as suggested in this recipe or caramelized. (Sometimes, I love to throw in some sliced strawberries, raspberries or blueberries along the bananas, especially during the summer season)
Chocolate chips substitute: Instead of chocolate chips, you can use honey, strawberry or raspberry jam, or simply some Nutella.
Additional ingredients suggestions: This recipe is extremely flexible and easily customizable. You can add some caramel and cinnamon sugar on the top for an extra touch of sweetness. You can also add some mini marshmallows or shredded coconut. For a crunchy touch, you can some crushed walnuts or almonds; they’ll provide your recipe with more protein and nutritional benefits as they are delicious, crunchy and healthy.
Storage: You can always store any leftovers you’ve got, but I don’t personally recommend it; this banana and peanut butter quesadillas is best eaten warm or else the tortilla can get a bit soggy.
